Chicken Peach Burritos

Makes 2.

Dice and then Saute together in 1 tsp oil:
2 previously cooked boneless skinless chicken thighs
1 shallot
1 Fresno chile pepper w/o stem or seeds

“Cube” the fruit of one large peach.

On 2 separate plates:
Place 1 (each) oversize burrito tortilla (14")
Place 2 (each) slices of medium cheddar cheese side-by-side

Dump equal portions of sauted mixture on to cheese.
Dump cut peach onto mixture.
Roll up burritos.

On a pre-heated crepe pan with about 1 tsp oil, fry both burritos simultaneously on both sides until golden brown.

This guy does Mexican, this works well with grilled chicken and veg too if its too hot to cook inside

Well NYC Mexican, as the two Mexican guys who work at my restaurant can attest, anything wrapped up is a Burrito, anything flat and closed = Quesadilla, anything open = Taco. :taco::burrito:

Tonight’s variation is:

Saute :
1 shallot
1 rose potato
1 large pre-cooked boneless/skinless chicken thigh
About 3/4 pint of bean sprouts
fruit of two Kei Apples
1/4 teaspoon Marie Sharp’s Habanero Sauce

Place on extra large flour tortilla with:
Grated cheddar cheese

Wrap burrito style and fry on crepe pan to melt the cheese.

Tonight’s variation was to use Kei Apple instead of peaches – and lacking tortillas, serve it stir-fry style.
