Frustrated by the unripe figs and freezing weather coming, I did some research a found a recipe for using unripe green figs here:

There are several recipes for making green fig preserves, greek, Italian and South American/Spanish recipes. Searchable online. There are all similar with slightly differing spices added. I made some before Christmas this year-delicious!
