Yukon Gold potatoes harvested in early July already sprouting

I don’t know how many of you grow taters, but I harvested a few pounds of nice Yukon Golds in early July.

Supposed to be a good storage variety, but after less than 90 days, they are sprouting in storage. I know part of the problem is it’s a little too warm, but since I have a modern home, I don’t really have any other option.

They’re in the coolest part of the house, the basement, but this time of year it still runs in the upper 60s. It doesn’t actually start getting chilly down there until the weather’s pretty cold outside, even though this part of the basement is unheated.

Do I have to either eat a bunch of potatoes, or give up on them?

I refrigerate mine inside jumbo ziplocks

They Say not to, but they always seem to keep pretty well that way instead of shriveling or sprouting

The early potatoes, I always try to eat during the summer as potato salad, etc instead of trying to keep them in long storage
