Slice them and roll them in a little flour for breading and cook them in a hot skillet in extra virgin olive oil. i dont usually use egg in my dough badder but most people do.Make sure and use the more yellow green tomatoes because the riper they are the better.

I should mention some people use corn meal instead of wheat flour. Make sure they are brown before you flip them over and cook the other side. The hotter the skillet and oil the better.

Found a fabulous green tomato relish recipe. You can make it sweet or vinegary with dill. Will make both!

GREEN TOMATOES WITH FETA CHEESE PASTA

3 tablespoons olive oil
1/2 onion, chopped
20 to 24 green cherry tomatoes cut in half or 3 medium tomatoes coarsely chopped
salt and pepper to taste
optional crushed red pepper
pasta for 2
1/4 to 1/3 cup crumbled feta cheese

In a large skillet, heat the olive oil over medium heat. Add the onion, and saute until soft. Stir in the green tomatoes, and season to taste with salt and pepper. Reduce heat to medium low, and cook for about 10 minutes.
Meanwhile in a large pot of boiling salted, water cook pasta until al dente. Drain.
