Black Twig Help

Hello,
I have been watching my black twig tree for a few weeks now and still having trouble deciding to pick or not.
I picked one today, and it was still pretty green inside. Should I wait until the flesh is yellow? Or pick now and store for a few months.
I am in Michigan zone 6b

The local orchard here in zone 7B Maryland won’t pick their BT until November, if that gives you a reference point.
