Finding ClearJel

I was going to can some apple pie filling today and realized I couldn’t use regular corn starch, ClearJel is the recommended starch for canning. Couldn’t find it locally so I took a drive to the Mennonite country store up in Lowville, NY to pick some up. As I was leaving the store with these two bags in hand I thought to myself, what would law enforcement think if they pulled me over and saw these two bags on my seat?

I’ve used a lot of ClearJel (and Instant ClearJel) and it’s a good choice for pie fillings. If you have trouble finding it W-13 is a decent cooked starch; don’t know if they have an instant version.

As for the police, yup, I’m sure they’d want to check them out closely!

Readily available on the internet, but I was hoping to can this weekend. I didn’t prepare well and was unaware corn starch wasn’t recommended. Thanks for the tip on W-13 Mark, I’m hoping to keep these stocked so I’m ready to do some canning.

The apple pie filling came out well, made a pie already and it’s very good. The only thing I’d change is reduce the liquid (it called for apple juice, I used cider) and with the reduced liquid I’d also reduce the ClearJel. I thought there was too much sauce and not enough apple. Found you have to leave a large amount of head space when canning, the filling actually expanded with the vacuum.
