White asparagus for
Easter lunch. Peeled steamed, served them with butter.Thanks @mrsg47 . very nice Easter lunch, someone looked so contended at the table😄. I have never had white asparagus, are they different variety (variety that is just white) or regular variety just lack of sun?
They are grown in tunnels in Argenteuil, outside of Paris they are known as Argenteuil asparagus. They have thicker stems now which become thinner as the season ends. You can buy the seeds. They used to be harvested by candlelight. Even their leaves (fern-like) are white with a pink tinge.
They are a variety called ‘Argenteuil’. You can grow them but to get them to be white, Not many of us have dark tunnels) you have to mound soil around them as they grow. The white is from lack of sunlight. It is a variety that is quite thick. Very good tasting too.
Thanks mrsg47 for recommending this variety. It sounds a lot of work to cover it up from the sun.
