How to prune Asian persimmon for fruit but also size in PNW?

Alot of my trees are kept small but im confused when it comes to keeping persimmon small.

Everything i read says fruit forms on new growth that comes from the last few buds on prior years wood.
So if i prune the persimmon to keep it small in summer (1/3-1/2 of this seasons growth) im pruning the last few buds off so i wouldnt get any fruit next year would I?

If my understanding is correct would i just prune half the branches this summer and the other half next summer and rinse and repeat annually or what?
