Looking for apples with unusual and interesting flavors, adding to my orchard

Hello Everyone,
I am starting to plan my winter grafting and would like to add as many apples with unusual and interesting flavors. I already have lots of cox offspring with that complex flavor including anise and other spices.
I like my Hubburtsons Nonesuch with that subtle berry/rosewater flavor.
Looking for more. Any suggestions?

Are you in the US or Canada? If you’re in Canada, I have found a number of interesting seedling apples in my area I’d be happy to share cuttings of (I’m cataloguing all the seedlings apples I can, it’s a long term project already yielding good results).

I’m not especially good as describing flavors, so you’ll likely learn more by looking these up elsewhere, but I’ll list the basic flavors in my environment to my tastebuds:

  • Strawberry Parfait - pink marbled, aromatic, some strawberry flavor, sweet
  • Pink Pearl - pink fleshed, berry notes, sweet/tart
  • Winekist - red fleshed, strong berry notes, more tart than sweet
  • Red Devil - pink marbled, some strawberry flavor, sweet/tart
  • Christmas Pink - pink fleshed, berry notes, sweet/tart
  • Grenadine - red fleshed, berry and fruit punch notes, sweet/tart
  • Pink Parfait - pink marbled, berry and perhaps cherry notes, sweet/tart
  • Apricot - orange fleshed, mild apricot flavor, sweet
  • Fearns Pippin - lemon and berry notes, sweet
  • Frostbite - orange fleshed, complex malty flavors, sweet
  • Hawaii - tropical flavors, sweet
  • Mott’s Pink - pink fleshed, berry notes, more tart than sweet
  • Pipsqueak - somewhat like a small Frostbite, sweet
  • Almata - red fleshed, berry and pomegranate flavors, more tart than sweet

I feel like Pristine has some tropical fruit undertones some years. Also St. Edmunds Pippin has a definite pear like flavor.

my wife probably has similar tastes and she likes pristine (way too good for how early it is) and redlove calypso (aromatic, berry notes, sour+sweet. needs fridge time or it’s too sour)

You might want to look at Dolgo. We just got our first Strawberry Parfait this year, also very good!

You may want to check on @SkillCult 's auctions, he has developed some very interesting varieties and he sells scionwood, seeds, and pollen periodically.

CrimsonCrisp develops interesting flavors if it hangs a long time and it has great 21st century texture. Plus it doesn’t get apple scab.
