Making use of Thinning's / June drop (Plums)

Its always a pain to throw away plum thinning’s and ones with removal PC damage. So I am turning them into plum syrup. After chunking and removing damaged parts I covered them in rock candy, only no water. As is traditional, but any sugar will work. The Sugar draws out the juices and liquifies. As long as there is enough sugar that it wont all dissolve it should not start to ferment but it could still grow mold on top. Which would not be dangerous of simply skimmed away. After a few days more sugar can be added to ensure safety and the syrup can be boiled to pasteurize.
