I see a lot of people letting their persimmons hang on the tree deep into the winter. Any positive or negative effects to this or are these people just leaving them on so they don’t have a pile of persimmons to deal with?

It looks ornamental and beautiful. And the fruits lose astringency with the cold.
But the fruits are not going to ripen after leaves turn color. No sugars are being accumulated.
You can pick off the fruit with the onset of leaf color change and let them ripen on the counter just as effectively.
