Persimmon questions

This season I had a surprise fruit on a Kasandra graft I performed this spring on my neighbors Giombo tree. Until the leaves had fallen I wasn’t aware it had fruited, if I had noticed, I would not have let it mature to relieve stress on the graft,

but since it’s a first of its variety for me, I would like to know if anyone knows when it should be picked and if it is an astringent type? This one is only about 1.25” in diameter, much smaller than described online, probably due to its first year after grafting.
