What cultivars do they grow in France?

The two that are mainly grown are Grosso (I have two plants in pots will take pics tomorrow, and Intermedia x lavandula. The latter is considered the true French lavender in France. They are both remarkably fragrant. I bought Grosso, because it grows in a pot, Intermedia prefers ground (they both do really).

Interesting! If you ever come back to the US, check out the new varieties Sensational and Phenomenal. Bred in Pennsylvania, they have done really well for me in zone 6 winters.
