Sweet potatoes already trying to sprout

I dug one sweet potato plant as a test today. Decent roots, but I’m letting the rest go a couple more weeks.

However, I noticed that the tops of the roots are already sending up sprouts, which seems unusual to me unless there has been some damage to the tops, which has not happened.

Will this affect storage and/or sproutability next spring if I try to keep one of these to start my own next year?
