To Graft or wait

I have few peach rootsotck growing in one gallon pots. This is the first time I will use rootstock to graft anything with stone fruit. Please look at the picture below

Should I graft or wait to let grow rootstock? In my opinion rootstock is too green and thin.
If I have to wait will one gallon pot is big enough to let this rootstock grow.
Any help appreciated. Thanks

I successfully cleft grafted peach seedlings of this size but they were dormant. You can always T bud or chip graft later in the summer.

I like the rootstock to really be pushing growth, you might let it grow a year
