Should I graft plum scion wood on peach or Apricot tree?
Just saw this chart on line, seems not very optimistic.

also, in your experience, would it be easier to graft apricot scion on peach tree or the other way around?

I’ve had no problems grafting Plums(Asian) and Apricots onto Peach(Nectarine) root stock.
The only thing is,Peach may not last as long,compared to a Plum or Apricot. Brady

Apricots on peach roots are pretty common (although I personally think it’s not a good thing to do for a number of reasons). Peach on apricot was reported to have long-term incompatibility, i.e., the graft might take at first but will eventually die in a few years.
