hobilus what diameter of rootstock would this technique not work with for a persimmon tree ?

It appears that the rootstock is flexible enough to bend somewhat or were you cutting the space out for the side insertion of the scion ?

Howdy- Its just a single slicing cut and then the scion, which has been cut twice to form a “V” is inserted. This is my preferred technique for anything from about 3/16 up to 5/8” or so. You can make it work with stuff a little bigger or a little smaller, but its less optimal. By the time you get up past 5/8, your usually doing more or less of a veneer graft, meaning you’re all the way out in the bark, not deeper into the stem. Give it a whirl. Its easy and fun.
