Adding basil to tomato sauce for canning

I cut the stems about 6-10" down. Swish them and cold water and shake them off. Lay them out on towels to dry for something like 30 min - 2 hours then bunch the cut ends of about 6 stalks together(remove the leaves from the tightly bunched section) and tie with cotton string leaving a tail long enough to tie a loop knot for hanging. Granted, this may won’t work in much of the country but our air is very dry here so I have never had any mold issues. I let them hang for 2 weeks to a month then take them down and put into a gallon zip-lock. I’ve been thinking about using my Nesco dehydrator on a low temp to dry them much faster, but that takes time I don’t have and besides as I mentioned earlier I love fragrance in the house for the first week until it subsides. They probably take about 10 days to dry entirely.
Growing a plant is a good idea too but I have never gotten around to starting an indoor herb garden.
