Attempting the famous apple tart tatin

Just curious since you have experience with growing Calville Blanc. What rootstock is yours on? Decent grower or low vigor? Does it bear every year or suffer from biennial bearing like many older varieties do? And lastly how late does it ripen for you? I heard it was a late season apple so just wondering the rough ripening dates for your location. Thanks!

It’s great with very thinly sliced GoldRush apples, and I always cut back the sugar.

I am in MA. As of today, 11/6, my Claville Blanc has not dropped yet. It is my first year getting this variety. It is a late apple to me.

It is a late spple. Mid to end of October is usually when they are picked, in France. It should be ready.
