It would seem that my cross pollination with Williams Pride and Pink Lady was successful.

Amazing! You mentioned they do drop their leaves, how long do the trees stay dormant for?
Between a 1-6 months. Sometimes I manually remove leaves to speedup the process.

April 2025 Update.
Williams Pride, Gold Rush and Pink Lady on Seedling Rootstock fruit development.
Pink Lady
Did the cross pollination with Williams Pride. Unfortunately, the tree is still in the nursery.
The roots of Standard rootstocks are very vigorous and will tend to outgrow the seedling bags within a 1 1/2 years.
Williams Pride
The fruits are starting to increase in size and develop some reddish color.
Gold Rush *(Originally thought is was Winter Banana)
Currently thoughts
The PRI varieties are proving to be good adaptors and precocious in the tropics 
.
