Great write-up! Very informative and I like the carbonation method too. I’ll have to try that if I get to that point.

Just an update on the jujube wine. It looks like I started out with a bit too much sugar. I’ve let it go for over a month at this point and what I ended up with was a sweet syrup. So I ordered some wine yeast, Lavlin D47, took one jar and split it into two jars, topped off with water (and added back a little sugar because it tasted watered down) and I will let it go like this to see how it turns out. The only thing I don’t have is an airlock for the jars so for now I will keep the lids mostly closed but cracked just enough to let out any CO2.
