Mild peppers I grow are various colors of Bell peppers, Pepperoncinis and Banana peppers. Hot Peppers Serrano, Jalapeno, Habanero, Ghost, Scorpion, Thai Chili, Poblanos. The mild peppers are good for sandwiches, salads and other dishes for flavor. The hot peppers are mostly used for sauces/salsa, but also for chili and other dishes that I want to add a little spicy kick to. I can tolerate the heat from the hot peppers more than some of my friends and family. I have to remember to tone down the peppers depending on who will be eating. What I consider a medium to mild salsa, I have friends who won’t touch it because it is too hot for them. I like playing around with the mix of sweet and hot peppers in my salsas to create some really interesting flavors. I also like a lot of garlic in my salsas
