To start I have 30 ft of fence, it runs east west ish and the side blocked is the north. Full southern exposure most of the day. I want to plant the Oh my and Oh yes 15ft apart espalier along the fence. Would 36" and 60" be good spacing for the wires? If these work out I would want to air layer a couple shoots that need to come off and run a couple double curtains almost like a pergola about 7-8ft off the ground along the bank at the back of my yard. I see 9 gauge high tensile recommended most often, but 12.5 gauge fencing wire is readily available, all the 9 gauge I see locally is not high tensile wire. What is a suitable spacing between posts?

Nine gauge is the standard and probably the best but I use the none barb fencing type wire.
No way on earth would I rip out Summit. Fry on the other hand I would happily trade for Black Fry.
Same, but recent years I’ve taken to untwisting from 2 strands to a single strand. It works just as well and stretches my roll of wire a lot further.

I like the posts at about 10’ - 12’ spacing but there is not really any right or wrong as long as the wires do not sag. The end post are the most important to brace. I like the H-brace but if you are a welder use @Fusion_power design. Use some form of tensioner on the wires.
