Ranking of varieties of cherries, only "high quality" varieties

Since I’ve obtained a few rootpac-r and have a source for a stick or so of Adara, I have a question about interstem.

I’m still interested in trying sweet cherry here in this unlikely location on the globe.

I’ve always seen interstems of a minimal length (less than 1 foot) then the top worked graft to the tree desired.

If I want a multi - variety grafted tree, is there any negative to growing out the interstem, in this case the Adara, to develop some scaffolds first then grafting the laterals individually to the varieties I want to try? This way I can test the possibility of growing several low chill cherries on one tree instead of taking up space for each individually. If I have several laterals I can graft multiple varieties the following spring at the same time.

I don’t see why this would be an issue, but I’ve not seen it anywhere I’ve looked and was curious if there was a reason why.
