The multi-variety graft idea sounds great for ornamental value. Peach grafts do take fine in my experience, the trick is timing, do it when the bark slips easily in late spring and use whip-and-tongue or cleft on small diameter wood. Chip budding in late summer is probably the most reliable method though if you haven’t grafted peach before. Less pressure to get it perfect compared to a spring graft where you’re racing against the clock.
