For bench grafting he locks his thumbs. And only puts pressure on the knife with his knife hand. His other hand only “holds” the rootstock. It is really hard to do damage that way.
In field grafting, when cutting the tongue, his other hand is completly out of the way from his knife hand. Also hard to damage yourself that way.
As always tough, sharper knife, less pressure needed. Lower chance of slipping and cutting yourself.
Proper technique regardles of knife sharpnes is inportant though! Luckely we live in youtube era, where there are multiple video’s of people demonstration proper tehcnique.
