That drives me crazy that pears and apples pay you back if you prune them. Water sprouts take a lot of time to trim back. This is a pear I top worked that I’m starting to get under control. This is what it looks like now
This is what it looked like in the summer. It had to much straight up growth. I trimmed that back when it was dormant.
