id imagine your approach will do okay for quince if the fruit are thinned and wire or hardwood is used instead of bamboo, but bamboo won’t hold loaded grape vines. bamboo is a type of grass not a tree. there are many books on the subject and the book “grow a little fruit tree” is helpful. best of luck!
