Your picture is of a black walnut rootstock with persian walnut grafted on top. Choose carefully both the rootstock and scion. You could use Thomas seedlings as rootstock. Thomas originated near King of Prussia, Pennsylvania about 150 years ago. It produces rapidly growing seedlings with excellent graft acceptance. For a persian scion, I would have to know your location (not just zone) to give a recommendation. Hansen and Allegheny would be possibles given they are hardy to your zone. A few growers in Pennsylvania and New York have these varieties. Grimo has several persian varieties. He may be able to make a recommendation and may even have some already grafted trees on black walnut rootstock.

I live near Philadelphia, but the tree(s) would prob be planted in Zone 5b NY (relatively close to Ithica area).
Would be fun to graft myself, vs buy pre-bought one.
