I do not get the thing for red. Not cracking or scalding yes. But I prefer the looks of the original. Not surprising though. I am fascinated by St. Lawrence.A gorgeous apple IMO.

I do like the St.Lawrence stripes as well. As far as the red color goes even in China which is the world largest producer of apples, consumer choose the reddest apples in studies done. A perception of being more ripe is reason most often cited.

Growers like redder strains as they usually color up earlier when they are firmer for handling and shipping.
