Apple variety recommendations

Does anyone have recommendations for real stand-out apples for areas with high summer heat & humidity (frequent 95-100s summer highs) and zone 7 (7a, northwest Oklahoma) winters. I have high CAR pressure in my area with a big population of Eastern red cedar- both on and around my property. Currently have a new trial plot with Liberty, William’s Pride, Whitney crab, Arkansas Black, Galarina, Grimes Golden, Kidd’s Orange Red, King David, and St. Edmund’s Pippin-- too early for fruit yet. Just was curious to see if there were any other varieties that would do especially well in this type of climate. Predominantly interested in fresh eating/storage-eating apples. I’m open to either new or heirloom varieties. Land is open/sunny with sandy/rocky loam. Drip irrigation setup. Trying for minimal spray. Currently growing espaliered rows on M.111/G.890 rootstocks.

Might be worth checking out Gilpin as well. Not sure how it would do in the south though. Big Horse Creek has it on their website, so maybe?
