Dolgo crab is typically 20+ brix, and is the highest Iā€™ve seen here in Fairbanks, Alaska. Lots of acid, but plenty of sugarā€¦like popping SweetTarts.

How is that Colvis Spice taste and texture for you?

Been decades since I had one. It was like a patchy russetted Golden Delicious.Sweeter with a strong spicy taste. I did not recall heavy cinnamon, but nutmeg yes. Very faint clove. Iā€™d say it was very firm but not quite crisp?

For a cider apple, my Medaille dā€™Ors were never under 27, peaked at around 32 or so. Completely inedible because they also have about double the tannin of any other cider apple as well.
