I haven’t had enough Gilpins to store. Maybe this coming year, the trees are getting pretty big now.

Forgot about tawdry old Colvis Spice. Yet another 20 brix apple.

Dolgo crab is typically 20+ brix, and is the highest I’ve seen here in Fairbanks, Alaska. Lots of acid, but plenty of sugar…like popping SweetTarts.

How is that Colvis Spice taste and texture for you?

Been decades since I had one. It was like a patchy russetted Golden Delicious.Sweeter with a strong spicy taste. I did not recall heavy cinnamon, but nutmeg yes. Very faint clove. I’d say it was very firm but not quite crisp?

For a cider apple, my Medaille d’Ors were never under 27, peaked at around 32 or so. Completely inedible because they also have about double the tannin of any other cider apple as well.
