@Colleen7 , @SMC_zone6@Ahmad -I took a trip to Thailand for a month of Nov. Before I left. I asked my husband to pick remaining late apples for me when temp went below 25 F. He did a good job. The 2024 season was a good apple year.
We don’t have a refrigerator space so he put those apples in coolers and left them in the unheated section of our basement. Those apples look good. What a guy!!!
The Star shape are Epi Etoile. They are late apples. Those looked ripe but not fully. When ripened well, they taste good.
The yellow ones are mostly Gold Rush after 6-7 weeks in storage so they turned yellow since they were picked closer to ripe (a good year). A few are Sun Crisp like the top right hand corner. Once yellow it is hard to tell GR and SC apart by their looks. Texture-wise, Gold Rush is denser. Both are excellent apples with a long storage life.

Steven,
How are your Epi Etoile this year. Mine did not ripen well despite picking in mid Nov. It still had unripe taste to it. I will try new ones after a couple more weeks.
I had a mixed result. Outstanding ones are Sun Crisp, Gold Rush and Fuji. Disappointing ones are Rubaiyat (a lot of cracks and most had flesh that was pinkish instead of deep red, quite odd) and a missing label very red-skinned apple variety that was all rotted!!!.
Apple production in my yard may have a lighter year in 2025.
