What are some of the best keeping plums? And how long do they stay good in cold storage?
Generally plums don’t get stored too long. They are dried or frozen for really long-term storage. I have stored prune plums for several months though and they were still good, some starting to ferment but most still tasty. A long-ripening-window plum such as Emerald Beaut may also store well if picked early but I never tried.
The sweeter the better, I’m thinking. Although yeast feeds on sugar a high enough level of sugar blocks the fermentation by drawing moisture away from the yeast. My understanding is that prunes work for long storage because as they lose moisture the sugar concentration increases, so you can leave the stone in.
I have had the worst luck with frozen plums unless they are dried or baked into something. Freezing raw plums, upon thawing always smell like old soggy prunes. No?
You can lacto ferment plums and other fruits and veggies.
I have only done this with cukes (pickles) delicious… and cabbage. Probiotic rich with lactobaccilis.
They keep well for months in cold storage.
I wonder what a fermented plum would taste like. More sour than usual I imagine.
Would vacuum sealing the plums prior to freezing help?
