Nice article Drew! I have a question I hope you can help out with which is why are our Kansas black eyed peas so gassy? Several friends who have grown them here have mentioned the same thing. I’ve heard add a carrot to the pot, add vinegar, etc. but nothing has worked in my experience.
You know that is funny because I have always thought BEP’s were less gassy than other beans as grown here especially Pinto’s. My Father in Law adds 2 tsp’s of baking soda to beans as he soaks them before he cooks them and he says that helps and I think that he is right. I eat beans all the time nearly everyday so I have never had a problem with it. Hope that helps.
