There are countless online grafting guides out there, I don’t know which one is the best. I have used various ones over the years.

You can keep a log of your harvests, bloom dates, etc.
I rolled out a feature yesterday that provides forecasted harvest dates for the current season based on historical harvest dates for that specific plant and statistical likelihoods based on other experiences from other growers.
Just create an account and start logging your progress. The algorithm adapts and should provide more accurate projections the more data you log. Eventually I hope to roll out a harvest forecast chart specific to each user.
