Cooking with Mank's Codlin

Anyone familiar with cooking them? I am sneaking in a tiny scion order but I am not seeing much on recipes using Codlins other then the basic Boil/Simmer styles of cooking. I love the fact it is a burr knot tree. That it seems to grow in most soils. And is a modest grower. But how does it bake? I get it can be a classic sauce apple.

Other things I’ve read it is the “sweetest” Codlin. It can be picked just larger then a Walnut and cooked. It cooks to different textures based on when picked.

I was looking at Horse and Starr as other tart cooker option. Horse gets blight and mildew so that is out. But Starr is a big proven cooker. A bit earlier in June/July. But is a firmer apple.

Basically I want an early season cooker and Mank’s/Starr fill that bill. We have plenty of early season eaters growing here.
