Can someone tell me what these crystal like things are on my plums and what to do about them? I have kept spraying to a minimum other than dormant spray and would like to only use organically approved products. Thanks!!

Pests’s entry holes, bite marks. Look up plum curculio, Oriental Fruit moth, etc.
An effective way to find answers is using the search function here. It is a symbol of a looking glass on the top right corner of a page.
Type in key words like “plum problems”, “peach clear oozes”, etc. A lot of threads pertaining to those issues will show up. You want to ask people here who grow fruit. I like reading Reddit but it is not the first place I ask about fruit growing. This is the place.
We used to get that on our peaches sometimes. It seems like a wound that leaks sap, only on the skin of the young fruit instead of the bark. I assumed it was from an injury of some kind, but I could be wrong. Sometimes we’d leave it and the finished fruit would be healed with just a small hard scar on the surface or occasionally sap included inside of the fruit. If the original wound was caused by bug entry, then there would be a bit of a mess from the insect and more sap. We either culled them during thinning, or just cut off the undesirable bits when we ate or canned the peaches. Some years it’s worse than others with a lot of damaged fruit. We never sprayed our trees with anything.
