Different ways of using Perilla,call for recipes

I got a tone of volunteers everywhere in the yard. I dried some, freeze some, give away some, and stir fry with scrambled eggs, stow with meat, put some in salad… what else can I use with this veggie /herb? Any recipes to share?

Sorry I don’t have the recipe but my husband likes the combination of eggplant, fried tofu, fresh tomato, and a little hoisin sauce stir fried together, and mix in the chopped, fresh “tia to” leaves at the end. Any type of eggplant is fine if the skin is not too tough. We also use the tia to along with other herbs and lettuce in Vietnamese spring rolls. You can google spring rolls to see what kind of fillings you may like to try.
