Next year I am building shade for my peppers. The heat in NJ summers basically lose me 2 months of production. Once it cooled down I started getting a great crop of Shishito, a mid heat level ufo shaped pepper and carolina reapers
Since pepperoncini are about the same shape as Shishito I am atempting my first lacto fermentation

I bought the glass fermenting weights and the bottle is an old kimchi jar.
