Fruit forward hot sauce recipes

As I find myself with hundreds of hot peppers and a bushel of peaches from a nearby farm, plus a vacuum sealer and chest freezer, I am thinking about making some hot sauces now and in the future.

Last year I made some sumo citrus hot sauce from the company recipe (https://m.youtube.com/shorts/pcKCS_T7mBE). I got some hot sauce bottles and funnels. But I haven’t made more and am unsure about the basic principles and parameters to tweak.

I did a quick search and saw some one off recipe pages from others (eg @Richard shared a peach habanero hot sauce recipe), but thought maybe there might be interested in a consolidated hot sauce recipe thread.

Here are this year’s ferments. The one on the right has a full peach sliced up and added. We usually make the peach one with Sugar Rush Peach (80%) and Fatalli (20%) peppers and call it Fatal Peach, but this year I had to use some yellow jalapenos since I was low on the SRP and used an orange variant of Roger’s Giant Habanero since my Fatalli seed must have been crossed since they came out red this year.
