Fuji, Honeycrisp, Spitzenburg

Very excited to try my first Spitzenburg, but I read that I should let it sit in the cooler for a while to reach full flavor. One source said a couple weeks and another said a month. What do you think? Also I understand where it’s first name Esopus derives from (the town in NY), but I haven’t found anything online for the German name Spitzenburg. Any one have any info on that?
