Grape pruning help

Zone 5b.

Growing 3 grape vines woven around each other to make a trunk. Head pruned so ideally 3 varieties will come off what apears to be 1 grape tree with a braided trunk.
Can i head prune the following varieties?
Black monukka, suffolk red seedless, interlakken seedless yellow.

I have some emergency vines saved.
The idea is chop the 3 vines wrapped arounf the Tpost at a couple feet tall next year when i put them inground.
Then allow each vine to develop 2 “branches”, then each branch chopped back the following year so each of the 3 varieties has 2 forked branches. Then start building fruit spurs.

Will this work? Im okay with root congestion stunting the vines because i only want it to be 5ft by 5ftish total after summer pruning. Only anticipating 2 clusters per “fork” (so 8 clusters per variety).
