I have about 20 buckets planted with spinach on top of my roof. As the days heat up I will bring these buckets down to slow down the growth to extend my harvest.

FYI I only learned this last year but they sell fast growing varieties and slow growing varieties. You plant the fast growing type first to get an early harvest and switch to the slow growing type because its slower to bolt.
