In my experience, As far as vegetables started in doors under grow lights, the hardest ones to harden off is anything cruciferous. I always seem to get this “bleaching” on older leaves, no matter how long I take to acclimate them to direct sunlight. They do recover fine.
Onions seem to be easiest. Most others are in between.
