Honey Cider apple variety

Between a 26 degree night when our trees were in full bloom, then the 17 year cicada brood followed by a mob of crows this was not our best year for fruit production but some trees set a few nice fruit.

This is Honey Cider or Honey Sweet as it is sometimes called. Thought lost but rediscovered in the 1970’s by the late Dr Elwood Fisher in Virginia.

I just planted a couple of these. Not a lot of info out there on it. Have you made cider with these? What have you found is the best use for em? And are they pure sweet like the golden sweet? Thanks!
