Hoshigaki coming along. They are soft now after starting out hard. Ready to start massaging them. Honan red fruit. Key to success is to pick fruit when they just turn red with some green OK still so they dry properly. Some of these were all green. A friend picked them from his Honan Red tree that got split in half from Hurricane Nicholas in Matagorda, TX. They are in my air conditioned laundry room. Humidity is around 60%. AC on here near Houston until Thanksgiving. Had a “cool” front from yesterday. Only 85F today down from 97F, I’ll have to find my sweater !

I tried Hoshigaki with Saijo last year in my ghouse and it was a disaster. With temp at 60, humidity at 70%, and fan running, they still got moldy after a week. I tried spraying with Vodka but finally gave up when mold kept returning.
So this year I am trying something really ‘janky’ -hanging them from the louvers on my heat pump! Since I’ve changed all the variables (temp, humidity, air flow),it will be hard to know what’s what in the end. These were my still green prototypes to see how stupid it would look. Pretty stupid but who knows! Will try for real in about another month.
