How hot of a pepper is too hot

I think I read the Carolina Reaper is 2.2 million and pepper spray is 2 million. That is why I made this post. We have peppers hotter than a pepper that is hotter than pepper spray. That being said according to chili heads there is some peppers who will be the hottest one day and the next may only be top 20 the next. I guess there is a lot of variation and makes you wonder if there is an element of luck when you look at these pepper eating competitions.

I think a good way to use dried very hot peppers is to grind them up in small batches in a spice grinder (wearing an N95 mask helps). The ground powder can then be kept in a pepper shaker and applied at the appropriate concentration on any food that needs heat. The ground powder will slowly lose heat when it is in an unsealed container.

That is what I have thought of doing and heard on cooking Reddits. Use a spice grinder. I am growing Carolina Reaper, Bismarck and Sweet Scorpion now. Time will tell how much heat they are dried. I know Carolina Reaper and Bismarck will be hot but the sweet scorpion is a mystery as there is very little information on it and only 1 seller selling it.

Nice. I have a dedicated coffee grinder I been using for years. 5 seconds on then shake it and do another 5 seconds. Then into a glass shaker jar as needed to replenish. Sometimes I look at store bought stuff and I’m grateful to never have to buy that nasty stuff again. Who knows what they use in that but it’s nothing like homegrown with all the seeds removed. It’s so vibrant, strong and amazing.

When I get a spice grinder for my peppers I am likely going to get a manual one if possible. All the electronic stuff now days is not made to last.

My experience with a Cuisinart spice and nut grinder has been good. It has lasted many years and will grind much faster than a manual grinder. I have a small manual grinder designed for hot peppers only, and it was so slow that I now pre-grind the peppers in the Cuisinart.

What do you think about using a Molcajete? I got one of those thinking they could work. I could hopefully use it to grind my hot peppers, oregano, thyme and French Terragon while giving it a nice spicy flavor.

Is the Molcajete a type of mortar and pestle? Unless the dried peppers are really brittle, I would not expect them to break into small enough pieces in a mortar. Pepper skins are quite fibrous, and you might just get fairly long fibers. I wanted to try that out with my dried peppers, but I couldn’t find our mortar and pestle.

It is similar. I asked on here and researched it. I guess the technique is different. I guess a Molcajete is also more used to make things like quauc or salsa while a mortar is more used to make pesto. I hear you can make pesto with this too. When my son got home, I borrowed his mortar and pestle, which is made from what looks like black granite. It ground a single pepper pretty well, although there were pieces of skin several mm long; and it would take a long time to grind up the pepper seeds. I think that it would be pretty time consuming to grind up any significant quantity of peppers. But, if you have really hot peppers and only grind up enough for a meal, it should work pretty well.

You’ll definitely need to wear a mask for hot peppers because you can’t cover the Molcahete.

I’m happy with Cayenne. I learned as an adult that my mouth is not the weak link in the capsaicin toleration chain. Since then I’ve tried not to be a tough guy.

Exactly.

Anybody can be a tough guy when eating in a social environment surrounded by gawkers amazed at your self-control. It’s a lot harder to be the tough guy when you’re all alone perched on a throne of comeuppance and regret with no one to be awed by your suffering.

not sure how to rate the heat…its hot but has such a good unique flavor…but i love hot…but its not like ghost pepper and those kind…they are too hot to eat… they sell seeds on etsy and i order some one time but it turned out to not be datil… just found this https://www.rareseeds.com/pepper-hot-datil
it has a different flavor of any pepper i have ever tasted…most people love it …only had a couple out of a 100 that didnt like it…

also i used the datil for pickles and it gives them a unique spicy taste that everyone loves…i used the balls breadnbutter stuff so all you got to do is add sugar and use it…i grow my own cucumbers and i cut the big end off of the datil pepper and put one in a pint and two in a quart…one near the bottom and one about the middle of the jar…i shake them every now and then to make sure the datil flavor gets in the entire jar…the datil flavor is sooooo good…

im like you. my wife complains when i put too much black pepper. she will tolerate jalapenos in a dish but that’s it. as a dried ground pepper ring of fire cayenne is the strongest i go but habaneros in a sauce is good also. I’ve had the capsasin come out of my face with sweat and go in my eyes. not fun. my brother can eat a ghost pepper whole and drink whiskey afterward and other than sweating, he tolerates it pretty good for a northerner.

hahaha… sounds like fun to me…the ghost and whiskey!! lol… the datil has such a unique flavor…its just different than any pepper i have ever eaten…its really hot but if you take the time to take out seeds you get the flavor and heat but not so bad… i leave the seeds in my sauce … it makes your tongue burn for 30 minutes!!!
i love cayenne too…eating some of it now and drinking a cold one and dipping in the sauce from datil. i love being retired!!.. every day ends with a Y and is saturday every day!!
