I was cleaning up my refrigerator yesterday. One of the drawers still had some pears left, most were soft and mushy. But there was one that was still firm. This is the Korean Giant I picked last fall around October . So it had been stored for about months and still hold its shape . The texture was not as crispy as the fresh picked ones, kinda like some crispy mixed with softness when bite into it.

Pear storage depends heavily on cultivar and temperature stored at. If you store your pears at -1 it is more likely to save. The grocery store pear varieties will often times have the longest shelf life. Of course all this does not even include canning. Seckle is the perfect canning pear for example.
Yes, the shelf life has to do with its harvesting time. I found that pick it a little early ,not fully ripe helps extending the shelf life

Also of course early picking extends shelf life for many fruits and veggies which is 1 reason we have the produce we do in stores but that doesn’t mean that they taste good harvested in this way
