I'm planning to help a neighbor top work some of their crabapple trees. I'd like some advice on how to best go about it

Would it be fine to leave the two main branches and graft different varieties? Should we cut them down to within a foot of the ground? With Saran wrap likely be sufficient as I don’t have grafting wax though. I have grafting tape for the scions.

Also, it’s projected to rain in a couple days, would some clear plastic bags over them be plenty protection from the rain?

Hello, in my opinion I would cut said trees to about 3ft.
Allow spring and summer growth. Identify which vertical growths originating from the original cut have the best potential. Remove the other scions / suckers.
Late summer / early fall graft onto the green wood ( new growth) and next spring should sprout with vigor.

@Corncherry gave a pretty good answer, in my opinion, but I would add that reducing the left hand tree to one central leader would be good.
